Vanilla Hibiscus Loaf

The recipe makes 10 servings.

Ingredients:

For the Vanilla Dough:
1 1/4 cups (4.4 oz / 125 g) almond flour
2 scoops HLTH Code Vanilla
2 Tablespoons (0.7 oz / 20 g) coconut flour
1 Tablespoon (0.25 oz / 7 g) psyllium husk
1 teaspoon instant yeast
1/4 cup (1.8 oz / 50 g) monk fruit sweetener
1/2 teaspoon baking powder
1/4 teaspoon salt
3 medium-sized eggs
1/3 cup (2.8 fl oz / 80 ml) warm almond milk
1/4 cup (2 oz / 56 g) melted butter or coconut oil
1 teaspoon vanilla extract

For the Hibiscus Swirl:
1 Tablespoon dried hibiscus petals
1 Tablespoon monk fruit sweetener
1 Tablespoon water
Optional: 1/4 teaspoon lemon zest

To Serve
Powdered monk fruit sweetener or HLTH Code Vanilla, to dust.

Instructions:

In a small bowl, stir the warm almond milk with the yeast. Let sit for about 5–10 minutes until slightly bubbly.
In a large bowl, whisk together the almond flour, HLTH Code Vanilla, coconut flour, psyllium husk, baking powder, salt, and monk fruit sweetener.
In another bowl, whisk the eggs, melted butter, vanilla extract, and the activated yeast mixture.
Combine the wet and dry ingredients. Mix until a sticky dough forms and let it rest for about 5 minutes.

Between two sheets of parchment paper, roll the dough into a rectangle (9×12 in / 23×30 cm). Dust the parchment paper with almond flour if the dough is too sticky.

In a small pan, simmer the hibiscus petals, monk fruit, and water for 2–3 minutes until thick and syrupy. Let cool slightly.
Spread the hibiscus mixture evenly over the dough rectangle. Carefully roll it up, starting from the long side, to form a log.
Slice the log lengthwise down the center to expose the filling. Twist the two halves together (like a braid), keeping the cut sides facing up, as much as possible.
Transfer the twist into a greased and parchment-lined loaf pan.
Cover and let rise in a warm place for 45 minutes (it won’t double, but will puff slightly).
Preheat oven to 350°F (175°C). Bake for 30–35 minutes, or until golden and set.

Cool slightly, then slice and serve. Dust with powdered monk fruit or a light dusting of HLTH Code Vanilla.
